99E - 3-501.16 cold holding violation corrected: The milkshake machine now holding the milkshake liquid at 38-39 F (both machines). Monitor that the solution stays 41 F or less. 6-301.11 The Consumer Advisory violation is corrected now per my conversation today with the owner who is going to ask management and staff to only fully cook hamburger beef. If burgers are not available cooked to order/undercooked then a consumer advisory is not needed on the menu. Be sure that all staff are aware of minimum cooking temperature of beef (155 F for 15 seconds) and are able to discuss and demonstrate during inspections. Owner also describes eggs being fully cooked, not offered runny. Minimum cooking temperature of eggs is 145 F for 15 secons. 0
