3-501.16 - THE WALK-IN COOLER ON THE RIGHT SIDE (NON-RAW CHICKEN WALK-IN COOLER) WAS HOLDLING THE AIR AT 48 F ON MY THERMOMETER AND 46 F ON THEIR INTERNAL THERMOMETER. THE FOODS INSIDE WERE MEASURED AT 47-49 F. CHECKED THE GREEN BEANS, RED BEANS, COOKED PULLED CHICKEN, POT PIE FILLING AND FOUND ALL BETWEEN 47-49 F. I SPOKE WITH THE MANAGER ON THE PHONE (HIS NAME IS MICHAEL I DO BELIEVE). HE SAID THAT THEY HAD SOMEONE IN TO FIX IT, AND THEY FOUND A SMALL LEAK AND WORKED ON IT. THE UNIT IS WARMER THAN I FOUND IT LAST WEEK, AND IT APPEARS THE LEAK WAS NOT COMPLETELY FIXED OR WAS A BIGGER PROBLEM THAN REPORTED. 10
99Z - FACILITY AGREED TO VOLUNTARILY CLOSE. WALK-IN COOLER IS STILL NOT WORKING. BEFORE OPENING THE FOLLOWING MUST BE COMPLETED: 1. WALK-IN COOLER MUST BE FIXED AND HOLDING 41 F OR LESS. 2. ALL PHF INSIDE THIS UNIT MUST HAVE BEEN DISCARDED. 3. MUST PROVIDE A RECEIPT OF SERVICE COMPLETED. 4. MUST HAVE A TEMPERATURE LOG CREATED AND USED AND MUST TAKE AT LEAST 3 TEMPERATURES EACH DAY ON THIS UNIT. 5. MUST PROVIDE US WITH A WRITTEN OUT CONTROL PLAN DESCRIBING HOW YOU WILL PREVENT THIS COOLER FROM BEING OUT OF COMPLAINCE IN THE FUTURE. YOU MAY CALL FOR A REINSPECTION AS SOON AS YOU ARE READY.
