99Z - During the inspection the PIC instructed me that hand washing is done at the 3-compartment sink. There is a hand washing sink that is no longer being used as a hand washing sink, just as a dump sink beside the ice bin. The location of the 3 comp sink is more convenient for the person cooking. He reports that the 3-comp sink does not get used forl 3-step wash rinse sanitize. Everything gets washed and sanitized in the dishwasher. The 3 comp sink is indirectly plumbed to a floor drain. The faucet only reaches the middle basin so the two outer basins are not able to serve as a 3-comp sink. This is approved as a hand washing sink but not a food prep sink or a dishwashing sink. Any future change in ownership will need new review on this issue. If you make changes in the future to any equipment, plumbing, or menu be sure it goes through plan review. 0
