99N - This is re-inspection #1 0
4-601.11(A) - 1. The deli slicer again has build up behind the blade. It appears to be dried and not fresh. The food worker in the downstairs kitchen reports he has not used it today. Also, the food workers cell phone and a clip board were resting on the console where meat falls when being cut. The worker removed the items and acknowledged the areas on the slicer that need to be cleaned. The slicer appears to have cleaner crevices than observed before so it has had a satisfactory cleaning since my last visit but since been used and insufficiently cleaned. The food worker downstairs immediately started dissasembling the slicer for cleaning. Please review the semi-annual inspection violation regarding slicer cleaning requirements. Monitor staff personal item storage is not on food contact surfaces. 2. The knives that were observed to be stored soiled in the inspection 9-8-16 were once again stored soiled in the same holder. I instructed the food worker to wash, rinse, sanitize, and air dry the knives and holder. Utensils must be washed, rinsed and sanitized before being stored for future use in the knife holder. I will return in or about another 2 weeks (around 9-26-16) to reinspect for these items again. If you have any questions, please call 503-742-5359. 3
