99E - The cold holding in the prep top, and reach in below are 43 F or less (within the 2 degree margin of error from 41 F) and the thermometer in the reach in reads 40 F. The dropin cooler across from the window now has tomato, sour cream guns, guac guns, cooked chicken thawing and pico in bins nested in ice. Everything there is also 43 F or less except where in one small corner without enough ice. That had tomato at 50 F. This was corrected on the spot. More ice added to be sure all sides of the bins are nested in ice up to the level of the food. They are also restricting the amount of food in the bins to ensure the effectiveness of the method. I discussed the importance of discussing their procedure with all staff to keep PHF cold. The PIC reports that she is checking the temperatures regularly with a food thermometer. 0
