4-601.11(A) - Metal container placed in drying rack when it was visibly soiled. The dish had been washed in the 3-compartment sink. The sanitize sink had soiled water and food particles in it and was not being changed enough to keep clean water in the sink. The metal pan was dipped in water, and had debri in that sink cling the dish. It was then placed in the clean drying rack. 3
