99E - This re-check inspection is for the chronic fly problem in the facility that produced tow complaints from customers. During today's visit there were less than a dozen large flies in the whole facility. The PIC says their grease interceptor clean-out company disclosed to them that they have a bent lid on the grease interceptor and there were maggots in it. This issue is being repaired and the maggots have been killed They are continuing treatment until repairs are complete to prevent flies from breeding in it. Pest control measures are still being done professionally until there are no more flies. **Corrected Priority Foundation** 0

99E - 1.The cold holding violations are corrected (3-501.16). The reach in on the line: liquid egg carton 40 F The walk in cooler: Steaks 41 F, Gravy 40 F. A working quantity of potatoes refilled at the prep top from 46 F to 56 F that will be used up within 20-30 min. Discussed the need for the PHF to be 41 F or below but small working quantity out of temp OK. Be sure to keep the potatoes 41 F or below otherwise. Discussed using lids on prep tops to maintain temp. Same goes for the lettuce/cut greens at salad prep area. The reach ins below each prep top are holding 41 F or below. 2. The pest (fly) control is much better. There are still a some large flies in the small waitstaff station out front and some small flies in the storage room by the back door. Overall this situation has much improved. Continue the pest management and reduce the number of flies. 0
