Okay because within the 2 degree margin of error but monitor the temps closely to be 41 F or below and adjust thermostat on unit as needed. The food was not stacked above rim; very good. Keep lids closed on unit when not in use. "Priority Foundation" 5-202.12 The hand washing sink in the restroom reached 102 F. Great. 0
